Goaty Gaia Potato Croquettes
2 potatoes
1 small onion, diced
3 tbsp butter
1/4 cup heavy cream
1/4 cup chives
2/3 cup grated goat cheddar (but of course can use regular cheddar)
salt and pepper to taste
1/4 cup flour
1 egg
1/2 cup panko
Boil and mash potatoes. Saute onion in 1 tbsp butter until soft and translucent and add to potato along with remaining 2 tbsp butter, cream, chives, salt and papper, and grated cheddar. Chill mixture for at least 20 mins. Form chilled mixture into small logs (2 tbsp +/-), dredge in flour, then egg, then panko. Freeze logs for at least 15 mins, then deep fry in oil at 375 degrees for a couple of minutes until golden. Serve and enjoy!
